Air-Fryer Eggplant
Houston, we’re unapologetically on a mission to make you fall in love with eggplant
Here’s how to make it:
Cut strips of the peeling off the eggplant - this makes it look so pretty when you slice it!
Slice eggplant.
Salt generously and like high blood pressure doesn’t exist because we will remove the salt after it pulls out the moisture from the eggplant. Let salt sit on the eggplant slices for 10–15 min. You’ll see the water come to the surface!
This step makes the eggplant crunchier! Do this before grilling or roasting squash or zucchini, too!
Pat away salt and water with a paper towel.
Coat eggplant slices in Old Country Olive Oil, salt, pepper, and paprika.
Place in air fryer for 5-7 min.
While the eggplant is cooking, whisk together the dressing:
1/2 cup Old Country Olive Oil tahini (did you know Rita makes tahini?!?)
3 tablespoons lemon juice - or to taste!
1/2 teaspoon kosher salt
1/2 cup water - add slowly and only add until it’s a nice texture for a sauce.
I love the sauce heavy on the lemon side!
Garnish sauce with paprika and parsley.
Remove eggplant from air fryer once it’s crisp and golden.
Drizzle with tahini lemon sauce.
Serve.
I let my eggplant swim in the sauce. It’s so good!
This was so quick and easy - and I’d literally eat the tahini lemon sauce on any salad, wrap, or roasted veggie.
