Kalamata Chopped Salad
Nour with @mymomstable comes through with this summer salad you won’t be able to stop eating!
Ingredients:
3 C diced cucumber
3 C diced tomato
1 C Kalamata olives, sliced thin
1 C diced red onion
1 large handful of mint sliced
1/2 C chopped parsley
1/3 C fresh lemon juice
1/3 C Old Country olive oil
1 tsp salt - or to taste
Mix all ingredients together and enjoy! Hack: chop it all small enough to enjoy with chips like a salsa!
