Pickled Peps
I eat pickled peppers all the dang time, and just realized a few months ago the Mezzetta brand I have always bought has yellow food coloring in them.
Seriously, why? 🙄
Good thing growing banana peppers in Houston is super easy and these peppers produce for over 6 months of the year!
Making a giant jar of pickled peppers is super easy!
Here’s what you need:
Glass jar (recipe is for a 32 ounce jar, half it if you are using a smaller jar)
2 cups white vinegar
2 cups apple cider vinegar
1/4 to 1/2 cup agave (I’ve used 3-4 Tbs before and it was still good - you do you.)
1 Tbs mustard seed
1 Tbs celery seed
Banana peppers or pepperoncini
You can pickle the peppers whole, but I like mine sliced. Cut tops off the peppers. Slice into thin circles. Fill the jar.
Make the brine: bring vinegars, agave, celery seed, and mustard seed to a rolling boil. Let brine cool down.
Pour brine over peppers in the jar. Make sure to get all the seasoning into the jar even if you don’t use all the liquid.
Note: there are sweet banana peppers and hot banana peppers. If you use sweet peppers and want them to have a kick, add red pepper flakes or jalapeno slices. If you have hot peppers and want them to be less hot - grow sweet peppers next year instead 😜.
